The Huckleberry Home – Overnight Breakfast Casserole

An easy, tasty and timesaving recipe for your holiday guests or busy weekday mornings. 



I love breakfast. My fondest memories are the aromas of my mom’s quiche and blueberry muffins wafting through the house on a chilly morning. To be awakened with the smell of coffee brewing, something yummy in the oven or on the griddle builds anticipation and suggests that getting out of bed, even when it’s 17 degrees outside, is a good idea.




Prep: Grease your casserole dish with butter or non-stick spray. Tools: 9×13 casserole dish, 4 Cup Pyrex measuring cup, whisk, spoon, slotted spoon, frying pan, aluminum foil or lid for your casserole dishIngredients: 1 pound breakfast sausage1 16oz can refrigerator biscuits (8 biscuits)1 C shredded cheese such as cheddar or a 3 cheese blend, divided6-10 eggs, measuring 2 cups1/2 C Milk1 4oz can mild green chilesSalt and pepper to taste



Begin by browning your sausage over medium high heat. While your sausage is browning, carefully open your refrigerator biscuits. Slice each biscuit dough piece into six triangles, like pizza cuts in 3 directions. Separate the the triangles and evenly spread them in a single layer in the bottom of your greased casserole dish. Using your slotted spoon, sprinkle your cooked, ground sausage over your biscuit dough. Follow that by sprinkling half a cup of your cheese over the sausage and biscuit dough.


Next, spoon the green chiles evenly over the cheese layer (it won’t be a perfect layer but make sure you don’t have a big blob of chiles stuck together). You can use the spoon to spread the chiles around.In your large measuring cup crack enough eggs to measure 2 cups (about 8 eggs), then pour in half a cup of milk with your eggs and whisk thoroughly. Add salt and pepper to taste and whisk it up good.


Pour the egg mixture in a zigzag pattern over your casserole guts. You can tap the casserole dish on your countertop to help the eggs settle in place. Then sprinkle that last 1/2 cup of cheese over the top.


Cover your casserole dish with foil and write on it: “Preheat oven to 350 degrees, remove foil, bake uncovered for 35 minutes until golden and bubbly”. Then put the casserole in your fridge. Next morning follow the instructions on your foil or ask your aunt who wakes up really early if she wouldn’t mind chucking it in the oven on your behalf. After you remove it from the oven let it rest for about 5 minutes before cutting it into squares.


Enjoy with some fresh fruit and a cup of coffee or hot apple cider.


Overnight Breakfast Casserole

Tips: you can use link sausage and slice them up, you can also use bacon or both even! Green chiles aren’t required, but worth it however, you could use chopped bell peppers and sprinkle with a pepper jack cheese.
